RECIPE: Roast Chicken With Three Mushrooms

The recipe was demonstrated by Chef George Lizares of the LJC Group of Restaurants  at The Maya Kitchen.  Chicken is a very versatile meat and much loved by both adults and kids. This Roast Chicken recipe is a nice dish for the Noche Buena feast.

Roast Chicken with Three Mushrooms

(Good for 4-5 persons)


Herb Butter Chicken Seasoning
2-3 tbsps Butter
1 tsp Fresh thyme leaves
1 tsp Fresh marjoram leaves
Salt and pepper to taste


Ingredients


1 pc Chicken
Salt and pepper to taste
1 cup Peeled and diced onions
¾ cup Peeled and diced carrots
¼ cup Celery, diced
¼ cup oil



Winter Garden At The China Palace

One fine Saturday, the family (including a balikbayan aunt and a Dutch uncle) found ourselves in the highlands. The travel was really uneventful especially for me- I slept the whole nine yards. Then there's the picture-taking session with Taal Volcano as the backdrop. The ducks were missing from the pond. Did we just ordered roast duck?! Hehehe.

Roast Chicken. The kids love the kropek! ;) Well, the chicken was delicious but still, kropek is kropek especially if there are kids around.




Country Chicken

I've been seeing and hearing about Country Chicken for about 3 years now until I finally decided to give it a try. My reason for not trying it sooner was because I'm allergic to chicken (unless its free-range). I went to the CC branch along Benavidez Street and ordered one chicken for take-out. I was a bit surprised that it costs P300 compared to the ones in Shopwise and Hypermart that costs less than P220. Anyways, CC is way bigger than the ones I mentioned. Upon arriving home, I excitedly took my first bite--- it's yummy! It's juicy and tender and flavorful. Now I'm a convert. Can't believe myself that I've wasted 3 years just to taste this chicken.
Roast Chicken


Another experiment in the kitchen. I marinaded the chicken in red wine and orange. Then placed it in the broiler along with the potatoes. So easy to make!



Ang Manok ni San Pedro



Actually, this lechon manok was bought from Sr. San Pedro who was the purveyor of lechon manok flavored with tanglad (lemongrass). This franchise hails from the south (Visayas).
I guess its popularity was because of the tanglad which makes it more flavorful and different from the other popular lechon manok around the metropolis.
