Balbacua et al, At The Maya Kitchen

The 4th stop of The Maya Kitchen Philippine Food Tour takes us to Davao, to sample Balbacua, Kinilaw nga Bariles, and PakFry. Culinary historian Pia Lim Castillo and Chef Datu Shariff Pendatun are the ones in-charge of this exciting culinary tour. 

About a decade ago, I've had my first taste of balbacua in Baguio. Yes, that popular summer destination in the north serves balbacua at the equally popular Ili-Likha. That soup was so memorable and comforting that it was lovingly-kept in my food memory bank. As for Chef Datu Shariff, I've had the pleasure of attending the luncheon that he hosted- The Coconut Cuisines of Muslim Mindanao, organized by the Culinary Historians of the Philippines. Talk about serendipity, right?

            One of the pioneers of the breakfast-all-day concept, Kanto Freestyle Breakfast is the featured restaurant on November 26Saturday1-3pm at The Maya Kitchen’s Top Eats Series.
            Top Eats features new eating places that are just making their mark in the culinary world with their unique take on food. The cooking demo comes with a food tasting. 

Chef Vicky Pacheco at The Maya Kitchen

Chef Vicky Pacheco who is the force behind Chateau 1771, Sentro 1771 and Flatiron will share some gastronomic dishes at The Maya Kitchen. The Cooking Demo is on November 5, 2016  from 1-3pm.

She will be preparing Flatiron's Brisket 6, a fork-tender beef brisket slow-cooked for 6 hours and served with sauteed brown and red rice, and a side side dish of cucumber-carrot slaw.

            There’s a lot of baking going on at The Maya Kitchen this month of October.
            Start off with Healthy Breads on October 1, Saturday, 9am-1pm. This hands-on, group workshop class includes recipes for Whole Wheat Sesame Bread, Kalabasa Loaf, Malunggay Loaf, Sourdough Bread and Focaccia. Class fee is P2,000.

September Baking and Cooking Class Schedule at The Maya Kitchen

"I Hate to Cook" cooking workshop at The Maya Kitchen is back this month of September. Learn how to prepare an impressive 5-course meal on September 10, and on September 17, the lesson will cover "Limited Space Cooking." Class fee is P2,000 per session.

June Baking and Cooking Class at The Maya Kitchen



June is not just about going back to school. It also means The Maya Kitchen has a whole array of baking and cooking classes for everyone. 


June 11: Cupcake Baking and Decorating (saturday, 9am-1pm)
Learn how to make peanut butter and chocolate chip cupcakes, coconut marshmallow, strawberries and cream, and cinnamon with cream cheese frosting. Class fee is P2,000.

Merry Month of May Baking and Cooking Classes at The Maya Kitchen

An exciting line-up of baking and cooking classes awaits everyone at The Maya Kitchen this month of May.

On May 3-8, kids will have fun while learning how to bake and cook at the Kids Magical Adventure. Themes include: Circus, Star Wars, Pixar Party, and Let It Go. Class fee is P6,000.

For the Young Foodie Hangout (teens class), teens will be taught basic kitchen knowledge as well as learn to cook and bake recipes inspired by famous fastfood joints and restaurants. Class schedule is on May 10-13, fee is P7,000.

Chef Marc Aubrey of Champetre Restaurant shares his beloved French Provincial Cuisine at The Maya Kitchen's cooking demo.

He prepared Chicken Liver and Cognac Parfait, Mediterranean Fish Soup, Seared Lamb Loin Filled with Mini Vegetable Ratatouille served with Potato Rosette & Rosemary Lamb Jus, and Buttered Dark Chocolate and Espresso Coffee Mousse with Biscuits and Whipped Cream.

Summer Baking and Cooking Workshop by The Maya Kitchen

It's baking and cooking time for kids and teens at The Maya Kitchen this summer. Kids and teens will enjoy a series of baking and cooking adventure.

On April 5-8 and on May 3-6 (Tuesday to Friday, 9am-1pm), kids will go on a Kids Magical Adventure. Themes include- Circus Manila, Inside Out, and Disneyland Adventure. Class fee is P6,000 and it includes ingredients, apron, and chef's hat.

Learn About Pies and More at The Maya Kitchen

The Maya Kitchen has a whole lot of exciting class this month of March. They are offering baking and cooking classes as well as a special course on pies, quiche and cupcakes.


Basic Baking is on March 1-4 and March 15-18, Tuesday to Friday9am-2pm for P7,000. The course focuses on Basic Baking Techniques applicable to small and commercial scale production of recipes and formulations of quick breads, pies, cookies, cakes and other bread varieties.

January Baking Lesson Courses at The Maya Kitchen

The Maya Kitchen has long been known as the institution of baking and cooking here in Manila. The school has produced great talents who are now highly acclaimed chefs and the school still continue to hone and discover new talented bakers and chefs.

This January, The Maya Kitchen offers Basic Baking (January 19 - 22, 2016). Lesson include basic baking techniques for home and commercial scale production of recipes for quick breads, pies, cookies, cakes, and other bread varieties. Fee is P7,000 for the workshop (9am - 2pm).


RECIPE: Bringhe by Chef Claude Tayag

The Maya Kitchen and Chef Claude Tayag shares this Bringhe recipe. Bringhe is a Kapampangan dish similar to paella and arroz ala valencia. It is a rice dish with meat and vegetables.




BRINGHE
 
Ingredients:
 
1 tablepoon                minced garlic
1/2 cup                       chopped onion
1 cup                          glutinous rice, presoaked in water for 30 minutes
1 cup                          regular rice
2-3 cups                     fish or chicken stock
2 cups                         coconut milk (KAKANG GATA) 
50 g                             turmeric, grate finely and soak in ½ cup water. Press and run through a fine                                           strainer to get the extract.
patis (fish sauce) and pepper to taste
Claude ‘9 Taba ng Talangka
chopped chives
crablets – seasoned with Claude ‘9 Inasal marinade, dredge in MAYA All Purpose Flour, then deep fried.
 
Procedure:
1.     In a non-stick frying pan, sauté garlic and onion and add glutinous and regular rice and continue sautéing.
2.     Pour in chicken stock and coconut milk. Add the turmeric extract. Season with patis and pepper.
3.      Simmer over low heat until rice is cooked, stirring occasionally.
4.     When rice is cooked, divide into 1/3 cup portions.
5.     Place each portion on a banana leaf and flatten into approximately 3” medallion.
6.     Heat a skillet and place the banana leaf-lined bringhe cakes. Cook until some charring appears on the leaves’ edges, producing a golden brown crust to form at the bottom of the bringhe (called tutóng).
7.     Top each one with a teaspoon of taba ng talangka.
8.     Sprinkle with chopped chives and top with fried crablets.

On October 24, 2015, Chef Marc Aubry of Champetre will do a French cooking demo at The Maya Kitchen.                Basic Culinary is on October 6-9 and October 20-23Tuesday to Friday9am-3pm. Learn Cooking Fundamentals and International Standard Techniques of meal preparation from soup, salad, pasta, main courses, sandwiches to desserts for Home and Institutional Scale Kitchens. The class includes a workshop and the course fee is P8,000.
           
           Cheesecake Fundamentals is on October 10Saturday9am-1pm with hands-on group workshop for P1,499. Learn to make and bake Basic Graham Cracker Crust, Basic Cheesecake, Red Velvet Cheesecake, Brownie Bars, Mini Cheesecakes and Cheesecake Toppings (Blueberry, Strawberry and Chocolate Glaze.

Beloved Kapampangan Chef Claude Tayag will showcase his famous recipes such as Sisig Terrine and Green Papaya Lumpiang Sariwa, in a cooking demo entitled- "From Kapampangan Palate to an Artist's Palette: An Update on 4 Pampango Dishes.
